1 lb. of boneless walleye fillets, cut into 2 inch nuggets
1 lb. of bacon
2 cups of your favorite fish batter
1 cup of grainy Dijon mustard
1 cup of yellow mustard
½ cup ranch dressing
Canola oil for frying
Mix yellow and grainy Dijon mustard together in a mixing bowl. Dip walleye nuggets into mustard mix. Cut bacon slices in half and wrap each walleye nugget with bacon. Place a toothpick through each nugget to keep the bacon in place. Dip the bacon wrapped nuggets once more in the mustard mix and generously coat with your favorite fish batter. Heat canola oil to 375F in a deep pan or pot. Fry nuggets for approx. 3 minutes per side or until golden brown. Allow nuggets to drain on a paper towel. Serve with lemon wedges and a side of ranch dressing and enjoy!
This is an excellent appetizer for four people.
