Sandhill Crane, aka “The Rib-eye of the Sky” is one of the best eating birds found in the province. From breasts to legs, thigh to wings,and everything in between the Sandhill crane has the flavour, texture, and size that make them extremely well suited to cooking methods similar to really good beef.
