Canada Goose Breasts with Peach Compote – Canada in The Rough: Rough Cooking

When it comes cooking waterfowl, Canada goose breasts often get a bad rap, sometimes being described as gamey or  livery. Although, if cooked properly Canada geese can taste just like a good piece of beef. There is however, a few steps to be taken before the cooking process, that can go a long way in creating a a really tasty steak.
