Smoked Black Bear Ragu – Canada in The Rough: Rough Cooking

When it comes to making wild game sausage, black bear is some of the finest meat you can use. Bear meat will generally have a little more fat content then the average wild game meat, like venison. This fat content brings more flavour into the sausage, making it that much more enjoyable.

Here’s a fun new recipe to spice up your black bear sausage; taking the traditional bratwurst style sausage and adding a little flair by mixing in various seasonings and vegetables to make a Smoked Black Bear Ragu.
