Skin-on Walleye Carbonara – HuntFishMB Recipes

One of the finest ways to cook any slab of fish is with the skin on. Once scaled and cooked you end up with a real flavorful chunk of meat with a crispy layer that won’t just flake apart as you cook it in the pan. Beyond that, fish of any kind paired with pasta is one of my favourite things, and a rich, creamy carbonara might just be one of the most simple and tasty plates of pasta you can make at home or really anywhere. Oh, not to mention it has bacon in it!

What’s in it:
  • 4 scaled walleye fillets
  • 3 egg yolks, 2 whole eggs
  • 1 cup fresh grated parmesan cheese
  • 4 servings of your favourite pasta noodle (really any noodle will work here, I like a long noodle-like spaghetti or fettuccine)
  • Bacon, cubed 
  • Salt + Pepper

How to do it:
  • Get a pot of lightly salted water on to boil.
  • For the first step here I don’t think you need any help. You’ll want to heat up a pan and get your bacon cooked to your liking. Don’t forget to add a little pepper. 
  • As the bacon cooks, crack your eggs into a bowl and add the parm. Mix them together well. You don’t need to worry about adding any salt to this sauce as the cheese is quite salty.

  • Remove your bacon from the pan. 
  • Score the skin of the walleye fillets and season. Then place them skin-side-down into the bacon fat, over medium-high heat and hold the fillet down with a spatula or tongs. Holding down the fillet will help it from curling on you during the initial searing stage. 
  • As the fish cooks, toss your noodles into the boiling water. 
  • Flip the fish once it looks to be cooked halfway through and finish cooking on the second side.

  • Now, scoop a quarter to a half cup of the noodle water into the egg and pam mixture while whisking quickly, this will start to warm the egg and melt the cheese, thickening the sauce. 
  • Add the hot noodles as soon as they are soft enough to eat and you can toss the bacon in here as well. 
  • Use a pair of tongs to fold the noodles and bacon into the sauce, making sure to coat everything well.

  • Toss a mound of noodles on a plate, gently place your walleye fillet on top with the crispy skin facing up, it’ll look more impressive that way. 
  • Drizzle on a little bit of extra virgin olive oil and you are ready to enjoy this rich, savoury and extremely delicious wild walleye dish!
