Venison Steak Sandwich – HuntFishMB Recipes

Some of the coldest days of the winter are here… and one of the best ways to pass the time is to dig into your freezer and experiment with new wild game recipes. In the HuntFishMB Recipe video below, Josh McFaddin takes a popular restaurant dish, a steak sandwich, and adds his own personal twist with a whitetail sirloin steak, creating a delicious Venison Steak Sandwich for you to try at home!

Venison Steak Sandwich 
  • Onion, sliced
  • Jalapeno, sliced
  • Venison Steak room temperature) this is a great application for either sirloin, top or bottom round steaks. 
  • Salt + Pepper
  • 2 cloves of garlic, smashed and peeled
  • 1 Tablespoon of canola oil
  • 4-6 stems of fresh thyme
  • 2 Tablespoons of butter
  • Baguette or buns 
  • Cheese, I used smoked gouda 
  • Steak or BBQ Sauce 
  • Mayo

How to do it:
  • Salt + Pepper your steak. Season it well as you can’t season the inside. 
  • Pre-heat your pan on medium-high heat, cast iron is best for this. 
  • Get the oil in the pan and place the garlic + thyme in there. They will start to release some oils into the canola oil, seasoning it, which will deliver some amazing flavours to your steak.

  • Immediately place your steaks on the pan and start the sear. Do not touch them until they are halfway cooked through, then flip. Leaving the steaks in one spot will help to develop an amazing crust on the outside. 
  • Add butter to the pan and let it melt. Spoon the liquid over the steaks to baste them as they finish cooking, this is going to add a ton of buttery, garlic, and thyme flavour to that steak.

  • Then they are done and cooked to an internal temp of 140F, remove from the pan, and let rest for at least 10-15 minutes on the counter. 
  • Return your pan to the heat and saute your sliced onions and jalapeno until softened.

  • Toast your bread + thinly slice your steak. 
  • Layer your bun now with mayo, cheese, your sauteed onion + jalapeno and the steak slices.

  • You can finish the sandwich with a steak, hot, or BBQ sauce and dig in!
